3 tablespoons Darjeeling tea leaves, preferably a second flush
Place 1 liter of gin in non-reactive container. Add tea leaves. Taste periodically until desired strength is achieved. Probably around 2 hours. Strain multiple times through cheesecloth or coffee filters until no visible tea remains. Store at room temperature or chilled.
Combine ingredients and do a dry Shake, then Shake with Ice. Double Strain into a chilled coupette glass. Garnish with a lemon twist.
*Cardamom Simple Syrup:
Take green 300gms Cardamom pods and break them up slightly with a muddling stick, then pour 700ml of boiling water onto them in a saucepan. Leave simmering on a low heat for about 30 minutes then strain out the pods. Take the remaining liquid and stir in 500gm of castor sugar until completely dissolved.
Add ingredients minus the ginger beer and shake vigorously. Strain and serve in highball glass and top off with ginger beer. Garnish with lemon wheel and thyme.
A Few Dashes Of Fee Brothers West Indian Orange Bitters
Add large ice cubes to a Boston shaker and stir gently until cold but not overly diluted. Strain into chilled cocktail glass and garnish with flamed orange twist.
