Jerry Thomas was an American bartender and one of the pioneers of the craft during the 1800s.  Often referred to as “The Father of American Mixology,” and nicknamed “Professor” Jerry Thomas, he worked in San Francisco in the heyday of the Gold Rush.  In 1862, he published The Bar-Tender’s Guide (aka How to Mix Drinks or The Bon-Vivant’s Companion) and created a book for recipes that had previously been an oral tradition.
